Orange Cranberry Bread


The inspiration for this recipe came from The Fresh Loaf. I saw it there while looking up some other bread recipe and bookmarked it to try later. This morning was the day. Rainy and cold outside with nowhere to go, it's the perfect morning to have the oven on and bake something yummy. The original recipe calls for fresh cranberries, but seeing as it's not the season for that, I used dried ones and adjusted the recipe to compensate for the extra sweetness of the dried berries.



Orange Cranberry Bread with Walnuts

1 cup whole wheat flour
1 cup unbleached all-purpose flour
1 cup coconut sugar
1 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda
2 oranges, juice and zest
enough water to bring juice to 3/4 cup
2 Tbs coconut oil, melted and slightly cooled
1 egg, beaten
1 cup dried cranberries
1/2 cup chopped walnuts


Grease and flour a loaf pan and preheat oven to 350 F. Mix dry ingredients in large bowl. Add zest, juice, water, egg and oil. Mix just until combined. Fold in cranberries and walnuts. Pour into prepared pan and bake 45 mins to one hour or until toothpick inserted into center comes out clean. Best enjoyed with a hot cup of quality earl grey tea (I used to think I didn't like earl grey tea, until I tried some really good stuff).
