Banana Oat Pancakes (with sourdough starter)

This morning I wanted to try making a variation on my standard plain sourdough pancakes. I had a nicely browning banana that needed to be used up and though I'd throw that in there. They cam out delicious!

Jenna's Banana Oat Pancakes

  • 250 g mature 100%-hydration sourdough starter
  • 100 g whole spelt flour
  • 25 g rolled oats
  • 1 mashed banana (I like to leave some big chunks in there)
  • 1 Tbs coconut oil
  • 2 eggs 
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • enough kefir or milk to thin to desired consistency
Mix all ingredients well in medium bowl and let sit for a few mins while you heat up the griddle. Lightly grease griddle with coconut oil. Pour batter by scant 1/4 cupfuls onto hot griddle. Flip when edges are set and bubbles appear in center. Cook on second side just another minute or until lightly browned on both sides. Serve warm. These are so good they really don't need any sweetener on them, but would be delicious with apple sauce.
