Chocolate Zucchini Cake

What can't you do with zucchini?! Our neighbor mentioned that he had a zucchini cake somewhere, so, when I needed to use up yet another monstrous zucchini, I looked online for a recipe. I actually thought maybe zucchini brownies would be good. I found a recipe that claimed to be zucchini brownies, but when I made it, it came out like cake. So, here you have my recipe for zucchini cake (just slightly modified from this zucchini brownies recipe).

Chocolate Zucchini Cake
1/2 cup coconut oil (melted if not liquid already)
2/3 cup agave or honey
2 tsp vanilla
2 cups flour (your choice, could be all-purpose or could be sprouted wheat or whole wheat or anything)
1/2 cup unsweetened cacao powder (or cocoa powder)
1 tsp baking soda
1 tsp salt
2 cups finely shredded or pureed zucchini (one very very large one or maybe 2 large)


Mix coconut oil, agave and vanilla in large bowl. Mix dry ingredients in medium bowl and then stir into wet. Fold in zucchini. The batter will be thick. Scrape into greased 8x8" baking dish. Bake in preheated 350 degree oven for about 30-40 mins or until toothpick inserted in center comes out clean.
