Almond Granola

Tonight is leftover night but I still felt the need to cook something :) So, here's my first attempt at making my own granola. It's not very precise, the only things I actually measured were the oats, oil, and agave.





Almond Granola

2 cups rolled oats (preferably organic)
1/2 - 3/4 cup shredded coconut (unsweetened)
1/2 cup sliced almonds
2 Tbs grapeseed oil (coconut oil would also be good)
1-2 Tbs agave nectar (to taste)
2 Tbs almond butter
1 tsp vanilla
pinch of salt
pinch of cinnamon

mix all ingredients in a medium bowl with your hands. The warmth of your hands will help meld the ingredients together and you can work out any clumps in the almond butter. Spread evenly on a large cookie sheet and bake at 275 degrees F for 15-20 mins, stirring a couple times during the cooking. Watch closely as once it starts to brown it can burn quickly. After you pull it out of the oven, you can add ground flax seed and/or chopped dried fruit. Granola makes a great breakfast or snack sprinkled over plain yogurt, with a few fresh or even frozen berries on top.
